Timo Mayer - Yarra Valley

Timo Mayer.jpg

Timo and Rhonda Mayer planted vines on their property (located on the slopes of Mt Toolebewong, 8km south of Healesville) in 2000 and thus the Bloody Hill was born.
Three verities were planted on the Bloody Hill; Chardonnay, Pinot Noir and Shiraz and in the best seasons ve wines are produced. Only old oak is used in the production of the wines except for a max of 30% with the Close Planted Pinot Noir – Timo believes only Pinot Noir can handle new oak. Small whole cluster ferments are used to stunning results in all the wines except for the ‘Bloody Hill’ Pinot Noir that is made up mostly of de stemmed fruit and can be considered as the ‘Village’ wine. The ‘Close Planted’ Pinot Noir Cuvee is the equivalent to a 1er and is stalky and spicy in its youth but rewards careful cellaring and lastly the Dr Mayer Pinot Noir cuvee is perhaps Timo’s Grand Cru and always consists of a 100% whole bunch fermentation – the wine is remarkably approachable in its youth, often showing little to no sign of whole bunch. It’s truly one of Australia’s great cult wines The Syrah you would swear comes from a French appellation – its smokey and savoury with a chewy texture and stunning avours of great cool climate Syrah. The Chardonnay is transparent and pure - Timo’s love for Chablis is clear with this wine. These are some of the best wines we represent and I’m proud to have them in our portfolio. Total production of 1000 cases in a top year.
